Designed for artisan producers and small food facilities, the chamber accommodates 1 trolley (0.7 × 0.7 × 1.4 m) and provides precise control over all phases of the process, including reddening, drying, dry and wet smoking, cooking, and final cooking.

The chamber features AISI 304 stainless steel panel construction filled with glass wool (optionally PUR foam), a single integrated smoke generator for authentic “home-made” flavor, and fans for uniform smoking and heat treatment. Humidity is controlled by a psychrometric thermometer, while product core temperature is monitored via puncture thermometer. Siemens control system allows programming of up to 100 programs with 100 steps each, fully controlling temperature, humidity, time, and delta-T for precise repeatable results. The chamber can be heated via electric, gas, or steam, and includes an automatic cleaning system for hygienic operation.
